2025 Sparkling Chardonnay

A fresh, elegant sparkling from the high-altitude, cool-climate Orange Wine Region. It’s made for celebrating with family, friends and colleagues over the festive season, and it suits every other season just as well.

Tasting notes
Crisp green apple leads on the nose, with subtle hints of yeastiness. The palate follows with zesty, refreshing acidity and a fine, delicate mousse. That makes it a perfect aperitif.

From our vineyard to your glass
The Chardonnay comes from Dindima’s French multi-clone vineyard, planted in 2006 and 2007. The fruit is handpicked, and the small-batch, handcrafted wine is made in a brut style, on site at our Nashdale winery using the Méthode Traditionelle technique.

After more than nine months maturing on lees in bottle, a portion of the vintage has been disgorged and prepared, ready to serve this summer. The rest continues to mature on lees in bottle, developing more texture and complexity for those who love the richer, bready, toasty character of an aged Sparkling Chardonnay. We’ll release it when the wine is ready.

What to serve with it

• Freshly shucked oysters: with a shallot and red wine vinaigrette if you have the time, or simply a squeeze of fresh lemon.
• King fish sashimi: its freshness is a lovely match.
• Japanese tempura: prawn, white fish and delicate vegetables.
