The 2003 Semillon is pale straw in colour and has a delicate bouquet
that expresses up front citrus followed by more complex malo yeasty
characters. The latter are the result of 16 months barrel maturation.
The citrus and malo characters continue through to the palate. They
are round and silky on the mid palate and the wine finishes with
lively, fresh acidity. Serve lightly chilled.
Food
matches
The
Semillon is particularly enjoyable with grilled or barbequed fish
or shellfish, using simple fresh ingredients. Perhaps a drizzle
of Lemon Myrtle olive oil, chopped parsley, a splash of Semillon,
salt and pepper and accompanied by a garden salad. Keep the food
very simple and light and you won’t be disappointed. Scallops
eat very well with the wine. It also teams well with Spaghetti Marinara.
The
wine can also accompany seafood with creamy sauces. It has good
acid to cut through the cream in the sauce and in winter would be
more appropriate but at this time of year my preference is for the
wine to be enjoyed with lighter style seafood meals.
Fromage
de Meaux matches very well with the Semillon. Another French cheese
which complements the wine is the washed rind Saint-Nectaire.
Gouda is also a pleasant accompaniment.
2005 Vintage
A refreshing and delicate Semillon, with lively lime and soft yeasty
characters on the nose and palate, the latter resulting from its
secondary barrel ferment in aged French oak. A pleasant hint of
honey is also detectable as the wine finishes.

now or cellar for 2 years. Alcohol 12.5%

for warmer summer days, this crisp wine drinks beautifully with
white fleshed seafood especially prawns and fish and chips.
